Authentic Chole Masala Northern Flavour.

Chole Masala

Chole Masala are two words that will always make you smile if you love eating “Northern Food”.

What are the Ingredients ?

Spices of India
  • Mustard Oil to cook
  • 1 big Cardamom (Elaichi)
  • 2 cup Pre-boiled Chole (chickpeas)
  • 3 Badi Elachi
  • 4 Garlic cloves (chopped)
  • 1 Bay leave (Tej patta)
  • 1 big Onion (chopped)
  • Salt to taste
  • 2 tsp Ginger paste
  • Some Ginger Julian’s (optional)
  • 2 Tomatoes (chopped)
  • 1 tablespoon Chole Masala
  • 1 tsp Turmeric powder
  • 2 tsp Red chili powder
  • 1 tsp Aamchur powder
  • Coriander leaves (chopped)
  • Onion cut in rings, Lemon cut into circle and green chilli (for garnish)

How to Boil the Chole (chickpeas) ?

Boiling Process.
  • You need to first soak the chickpeas for about 4 hours so that it will be easier for boiling & cooking it.
  • On boiling chickpeas, add cinnamon (daal-chini), Badi Elaichi, salt and a tea bag & cloves to give black colour to Chole.}
  • Pressure cook it for 3 whistle.
  • Pre-boiled Chole (chickpeas) is ready for cooking

How to Prepare it ?

Heat a pan with 3 spoon of Mustard oil.

Break cardamom and add it to the oil.

Add garlic.

Add Bay leave (Tejpatta).

Time to add chopped Onions.

Add salt {remember salt was also added while boiling the Chole (chickpeas)}

Mix well, let the onion get cooked (bit brown).

Add Ginger paste and few Ginger Julian’s. Cook for 4 minutes.

Add tomatoes.

Add Chole Masala, turmeric powder, red chilli powder.

Close it with the lid and cook till oil starts coming out from the masalas.

Add some water to ensure masala doesn’t get burnt.

Add the pre-boiled chole that we had prepared by boiling them with cardamom, salt, clove and tea bag (remove the tea bag).

Mix them all well.

Add Aamchur powder.

Mix well and let it get cooked for 20 minutes.

Lastly, add coriander leaves.

How to Serve it ?

  • Garnish the chole with onion, Lemon and green chillies.
  • Enjoy the hot chole with hot bhature (puri)
