Aloo Tikki Chaat

Ingredients to follow:

For Chana (Chickpeas) ingredients to keep ready:

  • 250gms Chana (Chickpeas)
  • Water to soak
  • 2 Green cardamom
  • 2 Black cardamom
  • 10 Black peppercorns
  • 1 Tea bag or (if you don’t have tea bag in cloth put come chaipatti and make a potli of it)
  • 6 Cloves
  • 1tsp Salt
  • 1tsp Red chili
  • 2 Green chili (finely chopped)
  • 1/2tsp Salt
  • 1tsp Turmeric
  • 1tsp Chana masala
  • 1tsp Fennel powder
  • 1tsp Cumin powder
  • 2tsp Dry mango powder (amchur powder)
  • 1tsp Coriander powder
  • 1 Bay leaf
  • 2tsp Ghee
  • 1tsp Cumin
  • 2 Dry red chili
  • 1 Cinnamon stick
  • 1tbsp Garlic (finely chopped)
  • 2tbsp Ginger (finely chopped)
  • 2 Onions (finely chopped)
  • 3 Tomato (finely chopped)
  • 1tsp Pomegranate seeds
  • Warm water
  • 200 gms All purpose flour (maida)
  • 2 tbsp Corn flour

To Prepare the Tikki ingredients below:

  • 4 Boiled mashed potatoes
  • 2 Onions
  • 1 cup Green peas (par boiled)
  • 2 tbsp Green chili (finely chopped)
  • Finely chopped Coriander Leaves
  • 1 tsp Coriander seeds
  • Bread crumbs for coating
  • 1 tsp Ginger (finely chopped)
  • 11/2 tsp Salt – 1 1/2 teaspoons
  • 1 tsp Red chili – 1 teaspoon
  • 2 tsp Chaat masala
  • 1 tsp Dry mango powder (amchur powder)
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1tsp Garam masala
  • Oil

To Garnish the Chaat below are the ingredients:

  • Green chutney to taste (your favourite green chutney which ever you like)
  • Onions (finely chopped)
  • Sev / bujiya
  • Mint leaves

Preparation Method:

How to prepare the chana (chickpeas) ?

  1. In a bowl, add Chan (chickpeas), add water and soak for overnight.
  2. Next morning, Transfer this into a pressure cooker, add water, green cardamom, black cardamom, black peppercorns, tea bag, cloves, salt, red chili, bay leaf and cover it with lid.
  3. Cook till you hear 4-5 whistles.
  4. Open the lid and remove the tea bag. Keep aside.
  5. Heat ghee in a heavy pan, add cumin, dry red chili, cinnamon stick and stir well.
  6. Add garlic, ginger and stir for 2 – 3 minutes.
  7. Then, add finely chopped onions and fry till translucent or until it turns golden brown in colour.
  8. Now, add finely chopped tomatoes and sauté until it turns soft and pulpy.
  9. Cook for 7-10 minutes on medium flame.
  10. Add green chili and stir well.
  11. Add salt, turmeric, chana masala, fennel powder, cumin powder, dry mango powder (amchur powder), coriander powder, pomegranate seeds and mix it well.
  12. Then, add the boiled cooked chickpeas in it and mix it well.
  13. Cook for 7-10 minutes on medium flame.
  14. Now, add warm water and mix it very well.
  15. Cook for another 5-7 minutes on medium flame.
  16. Remove it from heat and keep aside.
    (For All Purpose Paste)
  17. In a bowl, add all purpose flour (maida), corn flour, some water and mix it well to make a thick batter.
  18. Keep aside.

How to prepare the Tikki?

  1. In a mixing bowl, add all the ingredients except bread crumbs and oil.
  2. Mix all the ingredients very nicely.
  3. Take some mixture in your hand and shape it into a tikki (round balls and pat / press it on the palm)
  4. Dip the tikki in the prepared all purpose flour mixture (which was prepared earlier)
  5. Roll it into the bread crumbs. Coat the tikki completely.
  6. Heat sufficient oil in a deep frying pan / kadai and deep fry these until golden brown and crispy.
  7. Drain it on an absorbent / tissue paper.
  8. Keep aside.

How to serve the chaat?

  1. Place the tikki in a serving plate.
  2. Add the prepared chickpeas on top of it.
  3. Top it with some green chutney. (your favourite green chutney which ever you like)
  4. Garnish with some finely chopped onions, sev / bhujiya and mint leaves.
  5. Serve it to your families and friends.
