Stuffed Brinjal Fry! in a Superb way!!!

Stuffed Brinjal Fry or Stuffed Eggplants Fry is a satisfying dish made by stuffing brinjals with adding spices in it.

Brinjal

Ingredients:

  • 4 Dry red chili
  • 2tbsp Cumin seeds
  • 2tbsp Coriander seeds
  • 50grms Dry coconut
  • 7 Garlic cloves
  • 8 Curry leaves
  • 1tsp Salt
  • 1/2tsp Red chili
  • 1/2tsp Turmeric
  • 500grms Brinjal (Eggplant )
  • Water
  • Salt to taste
  • Oil
  • Coriander leaves (chopped)

Preparation Method:

Take a pan, add dry red chili, cumin seeds, coriander seeds, garlic cloves, curry leaves and dry roast for 5 minutes on medium heat or until it turns golden brown in colour.

Dry roast the Masala

Remove it from heat and allow it to cool down.

In a blender, add the roasted masala, add dry coconut, 1 tbsp salt, red chili, turmeric and blend it well.

Take the Brinjal (eggplant) and make four cuts in it.

In a bowl, add some water, 1 tsp salt and mix it well.

Stuff masala in Eggplant

Now, add the Brinjal (eggplant) in it and mix it well.

Now, take the eggplant out and stuff it with prepared mixture.

Heat 3-4 tablespoon oil in a pan, add the stuffed Brinjal (eggplant) in it and stir well.

Cover the pan with a lid and cook for about 10 minutes on medium flame.

Open the lid and give it a nice stir so that masala don’t stick at the bottom of the pan.

Add the leftover prepared masala and mix it well.

Again cover pan with a lid and cook for about 10 minutes more on medium flame.

Open the lid and give it a stir again.

Again, cover the pan with a lid and cook for about 10 minutes on medium flame.

Open the lid and give it a stir again.

Add the chopped coriander leaves and mix it well.

Cook for 5 minutes on medium flame & turn off the flame.

Serve it hot.
