Tempting Shahi Gobi Kofta – Serves 3

Ingredients for all:

(For Kofta)

  • 250 gms Grated cauliflower
  • 80 gms Gram flour
  • 1tsp Ginger garlic paste
  • 1/2tsp Salt
  • 1/4tsp Turmeric
  • 1/2tsp Red chili
  • 1/4tsp Black pepper
  • 1tsp Green chili
  • 1tbsp Coriander
  • Oil for frying

(For Puree)

  • 1tbsp Oil
  • 2 chopped Onions
  • 1tbsp Ginger
  • 1tbsp Garlic
  • 1tbsp chopped Green chili
  • 3 chopped Tomato
  • 2tsp Cashew
  • Salt to taste
  • 2tbsp Water

(For Shahi Gobi Kofta)

  • 2tbsp Oil
  • 1 Cinnamon stick
  • 2 Cloves
  • 2 Green cardamom
  • 1tsp Cumin
  • 1/4tsp Asafoetida (hing)
  • Salt to taste
  • 1/2tsp Turmeric
  • 1tsp Red chili
  • 1/4tsp Black pepper
  • 1tsp Coriander powder
  • 1tsp Cumin powder
  • 1/2tsp Sugar
  • 2 glass of Water
  • 30ml Fresh cream
  • 1tsp Garam masala
  • 1tbsp chopped Coriander leaves

Preparation Methods:

(For Kofta Preparation)

  1. In a mixing bowl, add all the above ingredients and mix it well.
  2. Take some mixture in your hands and shape it into a lemon sized ball or as per your desired size.
  3. Heat sufficient oil in a heavy kadai and deep fry these until golden brown and crispy.
  4. Drain it on an absorbent / tissue paper and keep aside.

(For Puree Preparation)

  1. Heat 1 tbsp oil in a pan, add chopped onions and fry till translucent.
  2. Add finely chopped ginger, finely chopped garlic, finely chopped green chili and stir well.
  3. Now, add chopped tomatoes and mix it well.
  4. Cook for 5 minutes on medium flame.
  5. Add chopped cashews, salt to taste and mix it well.
  6. Add water and mix it again.
  7. Cook for 10 minutes on medium flame.
  8. Remove it from flame and transfer this into a blender.
  9. Blend it into a smooth puree.
  10. Keep aside.

(For Shahi Gobi Kofta Preparation)

  1. Heat 2 tbsp oil in a pan, add cinnamon stick, cloves, green cardamom, cumin, asafoetida and stir for 3 minutes.
  2. Then, add the blended smooth puree in it and mix it well.
  3. Cook for 7 minutes on medium flame.
  4. Add 1/2 tsp salt, turmeric, red chili, black pepper, coriander powder, cumin powder and mix it well.
  5. Cover it with lid and cook for about 10 minutes on medium flame.
  6. Open the lid and give it a nice stir.
  7. Add sugar and mix it very well.
  8. Now, add 2 glass of water in it and mix it well.
  9. Again cover it with lid and cook for about 15 minutes on medium flame.
  10. Open the lid and give it a nice stir.
  11. Then, add the fresh cream and mix it well.
  12. Now, add the fried koftas in it and mix it well gently.
  13. Cook for 7 minutes on medium flame.
  14. Add garam masala and mix it well.
  15. Add chopped fresh coriander leaves and mix it again.
  16. Cook for another 5 minutes on medium flame.
  17. Remove it from flame.
  18. Garnish with coriander leaves.
  19. Serve it hot.
